1 3lb leg of goat
3 garlic cloves, peeled
1 tbs of paprika
1/2 tsp. of sea salt
1/2 tsp of pepper
3 tbs of olive oil
6 stripes of natural bacon
combine garlic, paprika, salt and pepper. Rub the leg with the olive oil, then apply the spices pressing firmly. Refrigerate, covered, for 2-3 hous. Remove from refrigerator and place leg in roasting rack. Lay the bacon over the leg. Roast at 350 for 1 – 1 1/2 hrs or until tender.

I can’t say that I feel grass fed beef is better than grain fed beef. There are lots of facts to weigh. First grass fed is better for the environment meaning the carbon print is smaller. But it takes a lot of land to have grass fed animals. In my opinion whether you are eating grass fed or grain and grass fed animals, you really need to know where it comes from and how it is handled. Some people will say their animals are treated humanely and yet they are in tight quarters and standing in muck, that isn’t humane. Meet the farmer that raises the product you are eating, the housing of the animals says a lot about the care the animal has received.
Animals living in tight quarters may have larger amounts of cortisol in their meat from stress of overcrowding and having to share their space with to many other animals.
