Goat, the most widely eaten meat across the globe

Almost all the goat meat you’ll ever cook will be done in a technique called low and slow – that is, low heat, and little simmer, and a lot of time.  Not so with the loin or rib chops.  These babies have little marbling, so they cook fast.  That said, there’s often a lip of fat that runs around the outer rim of each chop.  Leave this in place to protect the edges of the chops as they cook over the hot coals or in the smoking pan.  Enjoy.  More to come this week with recipes to make anyone’s mouth water.

 

 

KILE 2011 and Calvert County Fair 2011 Results

Success at KILE 2011.  A great way to end our show season.  Our Hereford steer held his own against all those black steers this weekend at the Keystone International Livestock Expo Junior Steer show.  He won Reserve Champion Middle Weight Steer.  It sure was nice to have a real judge and get real results for a very fine Hereford.

We will have more beef available the last of October, if you are looking for a 1/4 or 1/2 beef please place your order soon as we are almost sold out for the fall season.

Calvert County Fair 2011 brought a lot of success for the farm as well.  Edward won Grand Champion Showman and Jacob’s goat May won Best in Show Meat Doe.  Jacob is very proud of May as she is his bred and owned doe by his Buck and Doe.

We look forward to much success in the ring with our 2012 cattle and goats.  Remember your body deserves to eat fresh, you are what you eat.

So much fun at the 125th Calvert County Fair this year.  Edward was Grand Champion Beef Showman, Champion Shorthorn Steer, Champion Crossbred and Reserve Champion Market Steer, Jacob won Best in Show Female Meat Goat, Jacqueline won Champion Purebred Boer Goat and Reserve Champion Hereford Heifer.  Jacob also won second place in the Tractor Driving Contest. Best of all had so much fun with friends.

Beef orders are now being taken along with goat meat.  Don’t miss out on our fresh meat for the season.
